Our Blue Coyote Café serves hotel guests and visitors 24 hours a day from a menu of mouth watering American cuisine with a Southwest flair. Upscale, but casual, Blue Coyote maintains a welcoming décor with indoor-outdoor restaurant seating and a wonderful view of our main hotel pool and the adjacent water feature.

The restaurant’s large menu selection featuring items for breakfast, lunch and dinner is available to hotel guests and visitors any time day or night, weekdays or weekends. Those items include the best fresh omelets, specialty sandwiches as well as various salads and soups. Most recently, Blue Coyote has added a full sushi menu including Nigiri, Sashimi and rolls like Alaska, Rainbow and Boston. Sushi is served daily from 11am – 10pm Blue Coyote also offers happy hour Monday through Friday from 4pm – 7pm
